Cinnamon Roll French Toast combines two breakfast favorites in one sensational dish. Sweet cinnamon rolls transformed into a tasty French toast.
This week the kids were on spring break and we went to Chicago for a couple of days. If you have been to Chicago, food is a big part of the trip. We had our Chicago pizza at Giordanos, a fully loaded hot dog, Mexican at Uncle Julio’s, and cheesecake from The Cheesecake Factory.
But I think our best meal was breakfast at a local place called Yolk’s. Yolk’s has three locations in the Chicago area. They serve big portions with a new twist on old favorites.
My daughter, who is not a big egg eater, but loves anything with cinnamon, ordered a cinnamon roll French toast. It was made with Yolk’s own huge homemade cinnamon roll. The top with the icing was cut off and served as is and the rest of the roll was cut in half and fried up like good french toast should be. She loved it! I decided to replicate the recipe using Pillsbury cinnamon rolls as the base. I cooked them the night before.I wanted them cool and dry to soak up the egg mixture the next morning. I used a basic egg wash recipe; but left out the sugar and cinnamon I usually use to flavor my french toast. I softened the icing that comes in the package and drizzled it over the final product. The kids loved it and it was very simple.

- 1 (12.4 oz) can Pillsbury® refrigerated cinnamon rolls with icing
- 3 eggs
- 2/3 cup milk
- 1/3 cup half and half
- 1/4 tsp vanilla
- dash of salt
- 1/4 cup powder sugar
- Bake cinnamon rolls according to package directions and cool completely. Can be made the night before. Slice each roll in half lengthwise.
- Heat griddle to 375 or large pan on medium heat. Spray with cooking spray.
- In shallow bowl or dish combine milk, half and half, eggs, vanilla, and salt.
- Soak each slice in mixture turn to coat completely and drain off excess. Cook 4 minutes on each side.
- In small bowl melt icing in microwave for 10 seconds. Drizzle slices with icing and dust with sugar.
