Last night I grilled four large split bone-in chicken breasts for dinner. We only used two so I decided to use the leftovers to make this quick and easy BBQ Chicken Pizza. This recipe would also work great with store-bought rotisserie chicken tossed in BBQ sauce. A quick stop at the store, 25 minutes, and you have a great dinner the kids will love. The only prep work is slicing the green onion and shredding the chicken. This would also make a great appetizer.

Get your grill ready to make this flavorful BBQ Chicken Pizza on Garlic Parmesan Focaccia. Done in 30 minutes using store bought chicken and focaccia bread.
- 1 loaf of garlic parmesan focaccia bread.
- 2 cups BBQ chicken cooked (you can also use rotisserie chicken, tossed with bbq sauce)
- 1 cups light Alfredo sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup Sweet Baby Rays BBQ sauce
- 2 green onions sliced, green parts only
Preheat oven to 400° F.
Place focaccia on a baking sheet.
Top focaccia bread with shredded chicken.
Cover chicken with Alfredo Sauce.
Top with cheese, BBQ sauce and green onion.
Bake in hot oven for 15 minutes.
Serve with a side salad or fruit.
