Baked and served with whipped cream and a tangy lime topping.My wife Christie loves key lime pie so for a recent dinner group I decided to turn it into a pizza using another of her favorite desserts (shortbread cookie) as the crust, and a key lime pie spread as the topping.

I have made this key lime pie knock off a couple of different ways in the past weeks: dip, cheese ball and a of course the Key Lime Pizza. The pizza was great but the dip version, using Kroger honey sticks as the scoops, received the best reviews from my friends.My Key Lime Pizza is the combination of key lime pie and a shortbread cookie crust. Key Lime Pizza
My Key Lime Pizza is the combination of key lime pie and a shortbread cookie crust. Baked and served with whipped cream and a tangy lime topping.
Ingredients
  • 3 (8 ouncpackages cream cheese room temperature
  • 2/3 cup sugar
  • 1/4 cup cinnamon or honey graham cracker sticks crushed
  • 2 tablespoons key lime juice
  • 2 tablespoons fresh key lime zest grated
Instructions
  1. Mix all ingredients in mixing bowl or food processor until well combined.
  2. Chill for 2 hours before spreading on shortbread crust.

Short Bread Pizza Crust
Ingredients
  • 2 cups all-purpose flour
  • 1 cup unsalted butter
  • 1/2 cup confectioners sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
Instructions
  1. Preheat oven to 350 degrees (F)
  2. In large mixing bowl cream butter and sugar on medium until light and fluffy.
  3. Mix dry ingredients and add to butter mixture. Blend.
  4. Pat mixture into a 12 inch round disk on pizza stone or cookie sheet
  5. Bake in preheated oven 13-16 minutes until edges are lightly browned.Cool Completely.
  6. For pizza top crust with key lime pie dip. Optional add kiwi slices to look like pepperoni. Top with whipped cream just before serving.
