The biggest struggle we have as parents is how to get our kids to eat good healthy food on a daily basis. But it is so hard to come up with new dishes to make and who has the time.

So most families end up eating processed foods, fast food or even just cold cereal.  Yuck! I admit that even though my blog is all about healthy easy dinners it is tough to come up with new recipes; So I mess around with simple ingredients and try to change-up the way I serve them.Crock Pot Chicken Ranch Fiesta Wraps is a simple 3 ingredient crock pot recipe which will make your family smile

For my Crock Pot Chicken Ranch Fiesta Wraps the combination of ranch dressing and taco seasonings made for a wonderful flavor explosion. I also use boneless chicken breasts and thighs for a till more flavor.

But the winner here is the condiments used to build the wraps. For the wrap itself I used low-calorie, low-fat Italian style flat breads from Flat Out. These have less than 90 calories.

I basically created a wrap bar so the kids could fill their wraps with awesome healthy ingredients like avocado, baby spinach, cilantro, tomatoes, black olives, red onion, fat-free ranch and pepper jack cheese.Crock Pot Chicken Ranch Fiesta Wraps is a simple 3 ingredient crock pot recipe which will make your family smile

Simply through all the ingredients for the Chicken Ranch Fiesta Wraps into the crock pot in the morning. Cook on low for 5-6 hours.

Shred the chicken and add a little ranch dressing to make it a little creamier. Chop up your condiments and you are ready to serve your family an easy healthy weeknight dinner.

Ingredients
  • 1 package boneless chicken thighs
  • 1 package boneless chicken breasts
  • 1 package ranch seasoning
  • 3 tbsp taco seasoning
  • 1/2 cup chicken broth
  • 1/4 cup low-fat ranch dressing
  • 8 wraps
Optional Condiments
  • 1 tomato diced
  • 1 cup black olives sliced
  • 1 avocado diced
  • 1/2 red onion sliced thin
  • Ranch Dressing
  • Cilantro
  • 1 cup baby spinach
  • Shredded Cheese
Instructions
  1. Place first five ingredients in the slow cooker and stir to combine.

  2. Cook on low for 5 hours
  3. Shred chicken and return to crock pot along with 1/4 cup low-fat ranch dressing.

  4. Stir and cook on low for another 30 minutes
