It the New Year and it’s time for Dad Whats 4 Dinner to get back on track. Not only am I  working out and trying to get healthy, but I will also return to providing you easy healthy weeknight family dinner recipes. Like everyone, I went off the rails during the Holiday’s with my posts; Lots of Jello Pudding shots,  cranberry cookies and sweet breakfast treats. It was the holidays after all.

But that is over. The tree and decorations are down and put away. I am working out again and we our eating healthier. We are going to Hawaii in late February and its finally time to get back in shape, So with this recipe for Crock Pot Bourbon Pork I promise to get us all back on track.

My Crock Pot Bourbon Pork is simple and economical. I bought the family size pack of assorted pork chop to make this dish. Now if you have ever bought the pack of these chops you know they are not the best cut of pork. But with a little work of trimming the meat and fat off of the bone you have enough pork to feed the family. This meal can feed a family of 5 for around $12 with leftovers for lunch the next day.

I use a bacon marmalade called Little Pig Marmalade from Mixology Marmalades to make my Crock Pot Bourbon Pork. The marmalade is made with bourbon and bacon and is so good. This and other unique food items can be found at a great online store called Foodlyn. Foodlyn donates 25% of their profits to community-based non-profit groups fighting hunger in the United Stated. Ingredients
  • 2 lb pork cut into 1/2 inch pieces
  • 1 (8 oz) can sliced water chestnuts
  • 1/2 small onion, diced
  • 1/2 cup hoisin sauce
  • 1/3 cup soy sauce
  • 1/4 cup chicken broth
  • 1/4 cup bourbon
  • 2 tbsp. honey
  • 2 tbsp. Bacon Marmalade, optional but oh so good
  • 1 tsp. brown mustard
  • 1/3 cup brown sugar, packed
  • 1 tsp. garlic powder
  • 1/8 Chinese 5 spice or ground ginger
  • Cooked rice for serving
Instructions
  1. Spray inside of crock pot with cooking spray then add diced pork, water chestnuts and onions.
  2. In a small pot, whisk together remaining ingredients, except for rice, and bring to a boil.
  3. Cook for 2 minutes until all ingredients are combined.
  4. Pour over pork.
  5. Cover and cook for 3-4 hours on low.
  6. Serve over rice
