Kids and adults alike will love these Peanut Butter Easter Bars. Perfect dessert to make for Easter brunch or dinner.
When you think of Easter what comes to your mind. Of course we should think about what the day is truly about. Church, the Resurrection of Christ, family, dressing up, and Easter dinner. But really, since we were kids, it was also about a bunny bringing a basket full of candy or going to an Easter egg hunt, getting plastic eggs filled with candy or the big winner, money. Since I was little, I have always loved Reese’s peanut butter eggs. My mom used to make homemade peanut butter eggs for us every year.
I decided this year to make a bar that adds another one of my favorite’s “Whoppers Mini Robins Eggs”. The mini malted milk eggs add a crunchy, not so sweet, touch to these bars. My family loved them. An easy, make ahead, treat for Easter Sunday.

- 1 cup butter , melted
- 2 cups graham cracker crumbs
- 2 cups confectioner sugar
- 1 cup smooth peanut butter
- 1 tsp Rodelle vanilla extract
- 6-8 oz Whoppers Mini Robin Eggs
- 16 oz vanilla candy melts (Kroger brand comes in a handy tray for melting the candy)
- In mixing bowl combine on low-speed butter, graham crackers, sugar, peanut butter and vanilla. Once combined and smooth, fold in 1 cup Whopper Mini Robin Eggs.
- Line a 9 x 13 baking pan with parchment paper.
- Place peanut butter mixture into prepared pan and spread evenly. (Tip: Use wax paper coated with cooking spray to press down mixture).
- Lightly press Whoppers Mini Robbin Eggs on top of mixture.
- Melt white candy or chocolate in microwave on high for 1 minute. Stir and proceed to microwave in 15 second intervals until melted, stirring after each.
- Pour candy evenly over bars.
- Cool in refrigerator for 60 minutes. Cut and serve.

What a pretty no-bake bar! This would be great for cooking with kids and could be adapted to use with all kinds of Easter (or non-Easter) candy!

Very sweet bunny plate! These sound so good! Are vanilla candy melts the same thing as the white chocolate ones? We have them in the bulk section of our grocery store but not sure they are vanilla. White chocolate would be good too I think!

Mmm…I sure wouldn’t mind a couple of these bars in my Easter basket this year! I used to love robin eggs but haven’t had them in such a long time. Combining them with peanut butter sounds delicious!
