Hopefully, I have been a good dad, but I know I’m not perfect. Far from it! I try and I am learning to be more patient, especially when it comes to having teenage daughters. My goodness, I never thought it would be so hard. I have had a tougher time with my middle daughter Emily, then with my youngest daughter Ella.
I think there are two reasons for this. Emily and I both have similar personalities and sometimes we clash. Also, Ella is still young enough to enjoy cooking and doing projects with me. She actually still likes me. I think??
Most years on Father’s Day we are dropping the girls off at summer camp. This year Ella went camping a week early so the girls decided to make me these super simple and cute Golden Grahams Mini Cheesecake Tarts using my favorite cereal. Don’t they look happy to help??

Golden Grahams Mini Cheesecake Tarts is a simple treat the kids can make Dad for Father's Day. Mini cheesecake tarts made with dads favorite cereal.
- 2 1/2 cups Golden Grahams cereal
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 tsp. vanilla extract
- 1/4 tsp. cinnamon
- 2 cups Golden Grahams cereal
- 1/4 cup unsalted butter, melted
Line a 36 mini muffins tins with cupcake liners. Lightly grease with cooking spray. Set aside.
Pre-heat oven to 325°F.
- In a food processor, pulse Golden Grahams cereal with sugar until fine crumbs. Slowly add in melted butter and pulse until combined.
Press 1 teaspoon of crumbs into the bottom of prepared mini cups. Using a small roller or your thumb, press crumbs firmly into each individual cup.
Using your Electric mixer with a whisk attachment beat cream cheese with sugar, eggs, vanilla, and cinnamon using the whisk attachment of an electric mixer. Beat until fluffy and smooth (about 4-5 minutes). Fill each mini cup with cream cheese filling over graham crust.
- Place 2 cups of cereal into a sandwich bag and lightly crush using your hand. Add cereal to melted butter and stir to coat. Place 1/2 tablespoon on top of cream cheese filling
- Sprinkle each tart with cinnamon sugar mixture (see recipe below)
Bake for 20-25 minutes. Remove from oven and cool completely.
Remove tarts from mini muffin pan and store in an airtight container, in the refrigerator, for up to 5 days.
Cinnamon-Sugar Blend: Combine 1/4 cup sugar with 1 tablespoon cinnamon in a small bowl, using a fork or small whisk to thoroughly blend the two together. Store in an air-tight container.
