Buffalo Chicken Lasagna

My family loves anything buffalo. They also love lasagna. My Buffalo Chicken Lasagna is the perfect “mashup” of the two. A little spicy, easy to make and very yummy.

My family loves anything buffalo. They also love lasagna. My Buffalo Chicken Lasagna is the perfect "mashup" of the two. A little spicy, easy to make and very yummy.

As with all my recipes I try to make them easy and convenient as possible. For the chicken I bought two packages of bone-in chicken breasts. Season the chicken with salt, pepper and a little blackened seasoning. Bake for 40 minutes at 350° or check out how to boil chicken for these dishes on my post White Chicken Chili.  To make the recipe even easier you could substitute a rotisserie chicken from the store.

In all of my lasagna recipes I tend to use Bariilla oven ready no boil noodles. If you have not tried these, they are great. They save the step of cooking the noodles and the messy task of spreading your ricotta cheese mixture over slippery noodles. (TIP: spread ricotta cheese mixture on one side of the uncooked noodle. Clean and easy.)

If you have time, simmer the sauce and chicken for 45 minutes before assembling the lasagna, for added flavor. Serve with some fresh broccoli and crescent rolls.

Directions for Buffalo Chicken Lasagna:

Preheat oven to 350°. Lightly spray a 9×13 baking dish with nonstick cooking spray. In a mixing bowl, combine ricotta cheese, ranch dressing, beaten egg, sour cream and 3/4 cup of Italian cheese, set aside. In a pot, combine water, spaghetti sauce, wing sauce and chicken. Cover and heat over medium heat for 10 minutes. Spread approximately one cup of the sauce, chicken mixture across the bottom of the pan. Spread layer of cheese mixture on four noodles and layer over sauce.

Ingredients
  • 12 Barilla oven ready lasagna noodles
  • 3 cups skinless chicken breast, cooked and cubed (Substitute a store-bought rotisserie chicken)
  • 1 (24 oz) Barilla Marinara Sauce or your favorite jar of spaghetti sauce
  • 1 1/4 cups Franks Buffalo Wing Sauce
  • 1 cup water
  • 15 oz container low-fat ricotta cheese
  • 1 egg, beaten
  • 1/3 cup ranch dressing
  • 1/3 cup low-fat sour cream
  • 1 1/2 cups Italian cheese , divided (Substitute shredded mozzarella)
  • 1/4 cup crumbled blue cheese (optional)

    Wow, wow, wow! I could dive into that! My son (I call him the glutton) would eat a piece or two of that and then finish it off in the night! He loves anything buffalo! Great post!

    That looks so good! We can’t get buffalo sauce here (or most of your ingredients, actually) but I could make my own! Always looking for alternatives to favourites and I much prefer chicken to mince!

      Can you get Frank’s hot sauce or any hot sauce? If so buffalo sauce is 2 parts hot sauce to 1 part melted butter. I’m always trying to change up our favorites. My kids are good sports most of the time. :)))
