When I was a kid I remember my parents making tuna noodle casserole and how much I hated it. Dry, strange flavor and chunks of bad tuna. They also cooked salmon patties which were extremely dry and I could not add enough ketchup to make it tasty. As an adult I love both tuna and salmon, just usually not in a casserole or a patty.
A few weeks ago I decided to make an upscale tuna noodle casserole. You know fresh tuna, low fat, fresh bread crumbs and veggies. It was going to be a great easy meal for the blog. There is a reason you haven’t seen it featured on the pages of Dad Whats 4 Dinner. IT WAS HORRIBLE! My kids like most everything I cook. With three kids and a wife there is always one critic in the house. Since I’m the food blogger, for the most part, I know what is worthy and what is not. This dish got five thumbs down. I couldn’t figure out why it was so bad… I was to frustrated to worry about it and just moved on.
The night before my kids wanted homemade pizza or what I call semi-homemade for dinner. I purchased 3 refrigerated pizza roll dough’s. My kids are easy with pizza: dough, sauce, cheese and sometimes pepperoni. Well they enjoyed the pizza and I enjoyed a night off from cooking. So for lunch the next day I decide to use the third pizza dough and create this Tuna Buffalo Bacon Ranch Pinwheels. I mean the Bacon Ranch and Hot Buffalo Tuna packs were begging to be blended together. What an easy lunch, dinner or party appetizer and so simple to make.
To make: Place two pouches each of the Bacon Ranch and Hot Buffalo Tuna in a bowl. Added some light mayo, cheddar cheese, cooked bacon, chopped celery and some light ranch to the tuna.
These Tuna Buffalo Bacon Ranch Pinwheels are perfect to take to lunch because they reheat so well in the microwave. 30-45 seconds and they are ready. If you are a tuna fan you will love these new flavors and if you aren’t, you might just become one. Great healthy alternative for lunch or dinner. - 2 pouches StarKist’s Bacon Ranch Tuna
- 2 pouches StarKist’s Hot Buffalo Style Tuna
- 6 slices bacon cooked and chopped
- 2 tbsp lite mayo
- 2 tbsp lite ranch
- 1 cup celery diced
- 1 cup shredded cheddar cheese
- Hot Sauce
- 1 refrigerated pizza crust thin or regular crust
- 1/4 cup Parmesan cheese

Pre-heat oven to 375° F

Line a baking sheet with parchment paper and lightly grease with cooking spray, set aside.

In a large bowl place stir together all ingrediatns except pizza dough and parmsean cheese.

Roll out dough on a lightly greased counter or cutting board.

Evenly spread tuna mixture over dough leaving a 1/2 of dough uncovered around the edges.

Add a little hot sauce over top.

Roll the dough along the long edge jelly roll style.

Cut into 1 inch slices and place on prepared baking sheet.

Sprinkle Parmesan cheese over top of pinwheels.

Bake for 20-25 minutes until golden brown and puffed.

Serve with celery, hot sauce, ranch or blue cheese
-I used Pillsbury Thin Crust pizza dough. You could also use regular crust or even crescent roll sheets.
-Freeze roll for 10 minutes to make the roll easier to slice. (Optional)
