Game Day Black Bean Habanero Chili

Ingredients

  • 1 tbsp oil
  • 1 onion diced
  • 1 cup celery diced
  • 1 cup orange bell pepper diced
  • 2 cloves garlic minced
  • 2/3 cup diced habanero's divided *Tip: Use gloves when chopping habanero's*, about 4
  • 1 pound ground chicken
  • 3 ounce cans black beans undrained, 15
  • 2 ounce can chili ready diced tomatoes 14.5
  • 1 1/2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tbsp dried basil leaves

Instructions

  1. Heat the oil in a large heavy pot over medium heat.
  2. Cook onion, celery, bell pepper and garlic 5-7 minutes until onions are translucent.
  3. Add chicken and cook, stirring, until meat is brown, about 5 minutes.
  4. Stir in beans, tomatoes, chili powder, cumin, oregano, basil.
  5. Reduce heat to low, cover and simmer 90 minutes, stirring occasionally, until flavors are well blended.
  6. Top with remaining habaneros.

To make in crock pot follow first three steps as written. Place chicken and veggies in crock pot. Stir in beans, tomatoes and herbs. Cook on low for 5 hours.
