Pumpkin Pie Pudding Shots

  • 1 (15 oz.) can pumpkin puree
  • 4 ounces cream cheese, softened
  • 1 tsp pumpkin pie spice
  • 1 (3.5 oz.) packages instant vanilla pudding mix
  • 1 cup milk
  • 3/4 cup Rumchata or spiced rum
  • 8 ounces Cool Whip, plus more for topping
  • Crushed graham crackers for topping


  1. In a small bowl beat pumpkin, cream cheese, and pumpkin pie spice together with an electric mixer until smooth and creamy.
  2. Mix pudding, milk and Rumchata until well blended.
  3. Blend pudding mixture into pumpkin mixture until combined.
  4. Fold in whipped topping until blended.
  5. Divide into individual servings. I used a pastry bag and piped the pudding shots into 1.5 ounce cups.
  6. Top with a squeeze of whipped topping and a sprinkle of crushed graham crackers.
  7. Store in freezer.
