Preheat oven to 375° F.
Brush butter on one side of the flour tortillas. Generously sprinkle with the sugar and cinnamon mixture. Repeat on the flip side of the tortilla.
Arrange tortillas in single layer on baking sheets.
Bake until crisp, 10 to 12 minutes.
Let chips cool on a wire rack before breaking into pieces.
Serve with ice cream or whipped topping drizzled with honey.
