Ingredients

  • 4 boneless strip steaks or rib-eye's, 1 1/4 inch thick
  • 1 tbsp. oil
  • 1 onion, cut in half
  • Kosher salt
  • freshly ground pepper
  • 4 tbsp. butter, divided

Instructions

  1. Heat your grill on high.
  2. About 30 minutes before ready to grill, remove steaks from the refrigerator and allow them to come to room temperature.

  3. Soak cut side of onion in the oil.

  4. After cleaning the grill use the onion half to rub the grill grates with oil.
  5. Season the steaks with salt and pepper on both sides.
  6. Place the steaks on the grill and cook until slightly charred, about 4 to 5 minutes.
  7. Flip the steaks using tongs. (Never use a fork to turn steaks)
  8. Top steaks with a pat of butter.

Continue to grill to desired temperature:

  1. Medium-rare 3 to 5 minutes (135°F)

  2. Medium 5 to 7 minutes (140°F)
  3. Medium-well 7 to 9 minutes (150°F)
  4. Remove steaks from the grill and transfer to a cutting board and let rest 5 minutes before slicing.
