Ingredients

  • 12 egg roll wrappers

Pumpkin Pie Filling

  • 6-8 Pumpkin Spiced Oreo Cookies . optional
  • 1 cup pumpkin puree about 3/4 of a can
  • 1 egg
  • 2 tbsp sugar
  • 1/2 tsp vanilla
  • 1 tsp pumpkin pie spice

Cream Cheese Mixture

  • 8 oz . low fat cream cheese softened
  • 1 tsp pumpkin pie spice
  • 1/2 tsp vanilla
  • 1 tsp lemon juice
  • 2 tbsp sugar
  • 1 tbsp egg + 2 water Egg Wash
  • 1/4 cup cinnamon sugar optional
  • Whipped cream optional

Instructions

  1. Preheat oven to 425°
  2. Place parchment paper on a large baking sheet and spray with cooking spray.
  3. In a food processor, pulse the Oreo's until very fine.
  4. Add the pumpkin puree, egg, sugar, vanilla and pumpkin pie spice and process for 1 minute until smooth. Set aside

  6. In a bowl. add cream cheese, lemon juice, sugar, and pumpkin pie spice.
  7. Use a hand mixer to blend until smooth.
  8. Place 1 1/2 tbsp of both mixtures on a egg roll wrapper.
  9. Brush edges with egg wash.
  10. Repeat with each wrapper and seal tight. Place on prepared baking sheet.

  12. Lightly spray egg rolls with cooking spray
  13. Bake in a 425° pre-heated oven for 20 minutes. Turning after 10 minutes.
  14. In the last five minutes of cooking, sprinkle with a cinnamon sugar mixture.
  15. Serve with whipped cream and a little more pumpkin spice
