Banana Streusel Coffee Cake

My Banana Streusel Coffee Cake is super moist with a sweet cream cheese frosting. Perfect for breakfast or dessert!

Ingredients

  • 2 cups large ripe bananas, smashed (about 1 )
  • 1 box yellow cake mix
  • 1 (3 oz.) box vanilla instant pudding
  • 1/2 cup oil
  • 4 eggs
  • 1 tsp. vanilla
  • 1/2 cup chopped walnuts or pecans
  • 1/3 cup packed brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg

Instructions

  1. Grease and flour a bundt pan; set aside,
  2. In a stand mixing bowl, combine bananas, cake mix, pudding mix, oil, eggs, and vanilla.
  3. Mix on low for 30 seconds, then beat on medium speed 4 minutes, scraping the sides of bowl as needed.
  4. Mix nuts, brown sugar, cinnamon, and nutmeg.

  5. Sprinkle half of streusel mixture into bottom of prepared bundt pan.
  6. Pour half of cake batter into the pan.
  7. Sprinkle with remaining streusel mixture.
  8. Cover with remaining batter.
  9. Swirl a knife in the batter in a figure 8 patterns through the layers.
  10. Bake at 325°F for 55-60 minutes.
  11. Cool in pan on rack for 25 minutes, then invert onto rack and allow to cool completely.
  12. Drizzle with cream cheese frosting.
