Healthy Crock Pot Jambalaya

Ingredients

  • 1 Tbsp olive oil
  • 1 lb . skinless boneless chicken thighs, cut into 1-inch pieces
  • 1 lb . skinless boneless chicken breasts, cut into 1-inch pieces
  • 1 large onion chopped
  • 1 green or red bell pepper seeded and chopped
  • 1 cup celery (about 3 stalks) chopped
  • 3 cloves garlic minced
  • 1 lb . turkey smoked sausage cut into 1/4-inch-thick slices
  • 1 Tbsp salt-free Cajun or Creole seasoning
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 1 oz can diced tomatoes undrained, 14 1/2-
  • 1 oz can diced tomatoes with green chilies undrained, 14 1/2-
  • 2 cups lower-sodium chicken broth
  • 1 3/4 cups brown rice cooked
  • 1 lb large shrimp peeled and deveined
  • 1 Tbsp hot sauce optional
  • leaves Fresh parsley for garnish

Instructions

  1. Coat inside of crock pot with cooking spray.
  2. Heat oil a large skillet over medium high heat.
  3. Add chicken pieces and cook for 3-4 minutes, stirring often until slightly browned.
  4. Place chicken in crock pot.
  5. In the same skillet add onion, bell pepper, celery, and garlic; sauté 4-5 minutes until crisp tender.
  6. Add onion mixture, turkey sausage, and next 7 ingredients, through chicken broth, to crock pot. Cover and cook on low for 4 hours.
  7. Cook rice according to package directions. Can be done the night before.[/i
  8. Add cooked rice, shrimp and hot sauce to crock pot.
  9. Cover and cook on high 15 minutes or until shrimp are done.
  10. Garnish with parsley leaves, if desired.
