First, make the marinade by combing first 10 ingredients through cilantro in a food processor. Pulse until the onion is minced.
Place the marinade and pork into a large ziplock bag; Toss to coat. (Optional: marinate in refrigerate for 4-12 hours to marinate, but this isn’t necessary)
Close lid and set for 40 minutes at high pressure.
-Chef Notes. If you do not have an Instant pot you can combine all pork ingredients in a slow cooker and cook for 6 hours on low.
-You can also substitute deli shredded pulled pork.
