Ingredients
Olive Oil
6cube streak paddies
1tbspkosher salt
1tbspground black pepper
2tspgarlic powder
2tbspflour
16ozpackage of mushroomssliced
1cupgreen pepperdiced
1/2medium oniondiced
2clovesgarlicminced
Salt and pepper to taste
1 14ozcan diced tomatoes with basilonion and garlic
2cupstomato sauce
Thyme
2cupslow-fat mozzarella cheese
1/4cupshredded Parmesan
Instructions
Pre-heat oven to 375°
Heat oil in large pan over medium high heat. Sprinkle steaks on both sides with salt, pepper, garlic powder and flour. Brown steaks in batches, 2-3 minutes per side. Set aside on a plate.
After steaks are browned, add two tsp. oil to pan. Reduce heat to medium and add onion, mushrooms and peppers. Saute for 5 minutes.
Stir in garlic and spices and cook for 2 minutes. Add diced tomatoes and tomato sauce. Bring to boil.
Cover and reduce heat to simmer. Cook sauce for 10 minutes. Remove from heat.
Spread 1 cup of sauce in bottom of 11 x 13 baking dish. Layer cube steak on top of sauce. Pour remaining sauce over steaks. Cover and cook in pre-heated oven for 25 minutes. Uncover, add cheese and cook for another 5 - 10 minutes until cheese melts and sauce is bubbly.
Serve with pasta or polenta and roasted vegetables.
Italian Cube Streak can also be made in the crock pot. Simply brown meat, toss the rest of the ingredients into the crock pot in the morning and cook on low for 6 hours.
