Italian Cube Steak

My Italian Cube Steak is an inexpensive meal plan with plenty of flavor! You probably have most ingredients in your pantry.

Ingredients

  • Olive Oil
  • 6 cube streak paddies
  • 1 tbsp kosher salt
  • 1 tbsp ground black pepper
  • 2 tsp garlic powder
  • 2 tbsp flour
  • 16 oz package of mushrooms sliced
  • 1 cup green pepper diced
  • 1/2 medium onion diced
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • 1 14 oz can diced tomatoes with basil onion and garlic
  • 2 cups tomato sauce
  • Thyme
  • 2 cups low-fat mozzarella cheese
  • 1/4 cup shredded Parmesan

Instructions

  1. Pre-heat oven to 375°
  2. Heat oil in large pan over medium high heat. Sprinkle steaks on both sides with salt, pepper, garlic powder and flour. Brown steaks in batches, 2-3 minutes per side. Set aside on a plate.
  3. After steaks are browned, add two tsp. oil to pan. Reduce heat to medium and add onion, mushrooms and peppers. Saute for 5 minutes.
  4. Stir in garlic and spices and cook for 2 minutes. Add diced tomatoes and tomato sauce. Bring to boil.
  5. Cover and reduce heat to simmer. Cook sauce for 10 minutes. Remove from heat.
  6. Spread 1 cup of sauce in bottom of 11 x 13 baking dish. Layer cube steak on top of sauce. Pour remaining sauce over steaks. Cover and cook in pre-heated oven for 25 minutes. Uncover, add cheese and cook for another 5 - 10 minutes until cheese melts and sauce is bubbly.
  7. Serve with pasta or polenta and roasted vegetables.

Italian Cube Streak can also be made in the crock pot. Simply brown meat, toss the rest of the ingredients into the crock pot in the morning and cook on low for 6 hours.
