Smoked Meatloaf

Ingredients

Meatloaf:

  • 2 lbs ground beef + 1 lb ground pork, You can use all ground beef or ground turkey. I like the addition of the pork
  • 1 cup panko breadcrumbs
  • 2 egg, lightly beaten
  • 1 tbsp small sweet onions, finely chopped ( Substitute 1/2 dried minced onion flakes)
  • 1 tbsp dried Italian seasonings
  • 2 tsp table salt
  • 1/2 tsp black pepper
  • 1/3 cup ketchup
  • 2/3 cup half-and-half or milk

Sauce:

  • 1/2 cup ketchup
  • 1/2 cup barbecue sauce I used Sweet Baby Rays Sweet and Spicy for an extra kick
  • 4 tbsp cider vinegar
  • 4 tbsp dark brown sugar packed

Instructions

  1. Soak 3-4 cups wood (Alder or Apple wood) chips in water for at least 2 hours.
  2. Drain wood-chips and place in smoker box. Place smoker box on grill over a burner you will be using.
  3. Light grill and heat to 300° F
  4. Combine first nine ingredients and place in two prepared disposable loaf pans. (See tip above)
  5. Smooth out top.
  6. Combine all sauce ingredients and pour over top and sides of meatloaf.
  7. Place meatloaf's on preheated grill over indirect heat. (I placed the loaf's over my center burner, which is turned off.)
  8. Smoke/grill for 1.5 - 2 hrs. until internal temperature reaches 160 °F
  9. Remove from grill and allow to rest for 10 minutes before serving
