Cider Braised Country Ribs

Ingredients

  • 4-5 lbs boneless pork country ribs
  • Western Style BBQ Seasoning
  • 2 tsp kosher salt
  • 1 onion halved and sliced thin
  • 1 bell pepper sliced (Optional)
  • 2.5-3 cups apple cider or juice
  • 1 tbsp grape jelly
  • 1 tbsp Sweet Baby Rays Sweet and Spicy BBQ sauce

Instructions

  1. Pre-heat oven to 325°
  2. Place ribs in a roasting pan and season with Western Style BBQ Seasoning and salt.
  3. Rub evenly over meat.
  4. Add onion, pepper and cider and stir.
  5. Cover and cook 2 hours.

Apple Cider Onion Reduction Sauce

  1. After meat is cooked, discard peppers and strain cooking liquid reserving onions and 2 cups of liquid.
  2. In a medium pot add onions, cooking liquid, grape jelly and BBQ sauce.
  3. Whisk together and bring to boil, reduced by at least have and thickened.
  4. Brush cider reduction sauce over ribs and place under broiler for 5 minutes until bubbly and starting to caramelize.
  5. Serve with remaining sauce.

Crock Pot Method:

  1. To make in crock pot, follow directions above but place ingredients in crock pot and cook on low for 6 hours.
  2. Make reduction sauce as directed.
