Grilled Bacon Wrapped Greek Pork Medallions

My Grilled Bacon Wrapped Greek Pork Medallions is your perfect meal for Father's Day!

Ingredients

  • 1/4 cup red wine vinegar
  • 2 tbsp olive oil
  • juice of 1 lemon
  • 1 tbsp Greek seasoning
  • 1/2 medium onion chopped
  • 2 pounds pork tenderloins 1-1 1/2 each
  • 8 slices bacon
  • wooden picks
  • salt and black pepper to taste

Instructions

  1. In a small bowl, whisk together red wine, olive oil, lemon juice and Greek seasoning.
  2. Place tenderloins and onion in a gallon size bag.
  3. Add marinade and place in fridge for 2 hours turning a couple of times.
  4. Remove tenderloins from fridge and discard marinade.
  5. Slice tenderloins in approximately 1 to 1 1/4-inch wide medallions.
  6. Place flat side of two medallions together and wrap bacon slice around both pieces.
  7. Secure with wooden picks.
  8. Repeat with remaining medallions and bacon.
  9. At this point the pork can be covered with plastic wrap and refrigerated until ready to grill.
  10. When ready to grill pre-heat a cast iron grill pan to 400º. Spray with cooking spray or a little olive oil.
  11. Salt and pepper both sides of medallions.
  12. Place pork medallions in grill pan or directly on grill.
  13. Close lid and grill for 5-7 minutes per side or until internal temperature reaches 145° F.
  14. DO NOT OVERCOOK!!!
  15. Allow the pork to rest 5 minutes before serving.
