Slow Cooker Oktoberfest Stew is a wonderful fall meal featuring pork, bratwurst, white beans, beer and veggies.

Oktoberfest Stew

Ingredients

  • 1 tbsp. olive oil
  • 1 lb. 5 uncooked bratwurst, sliced into 1" rounds,
  • 1 lb. pork loin chops, diced
  • 2 large carrots, sliced
  • 1 cup celery ribs, diced
  • 1 large onion, diced
  • 2 1/2 cups beef stock
  • 1 cup German Lager beer
  • 2 bay leaves
  • 1/4 tsp. pepper
  • 2 (15.5oz.) cans white beans (Great Northern or Cannelloni), rinsed
  • 2 cups sauerkraut, rinsed and drained

Instructions

  1. Heat oil in a large skillet.
  2. Sear cut sides of bratwurst to seal and place in crockpot.
  3. Add next eight ingredients to pepper.
  4. Cook on low for 5 hours.
  5. Stir in white beans and sauerkraut and cook for another hour or so.
  6. Remove bay leaves before serving.
