Oatmeal Cream Pie Truffles

Two ingredient Oatmeal Cream Pie Truffles are the jewels of the Leprechaun. Easy to decorate for any holiday and the kids will love them.

Ingredients

  • 24 2 boxes Little Debbie Oatmeal Cream Pies
  • 8 oz. white chocolate bark

Optional:

  • Green sanding sugar

Instructions

  1. Scrape filling out of 6 pies. Set aside.
  2. Place the pies into a stand mixer.
  3. Mix until a soft crumbly dough forms.
  4. Use a tablespoon to make disks.
  5. On half the disks place a small dollop of pie filling.
  6. Top with remaining disks and press together to form a ball.
  7. Freeze for at least one hour or until ready to coat with chocolate.
  8. Melt chocolate bark in microwave for 60 seconds at 50% power. Stir and continue to microwave at 15 second intervals, until melted.
  9. Carefully coat each truffle and remove excess chocolate. Place on a lined baking sheet.
  10. Sprinkle with sanding sugar (optional).
