Scrape filling out of 6 pies. Set aside.

Place the pies into a stand mixer.

Mix until a soft crumbly dough forms.

Use a tablespoon to make disks.

On half the disks place a small dollop of pie filling.

Top with remaining disks and press together to form a ball.

Freeze for at least one hour or until ready to coat with chocolate.

Melt chocolate bark in microwave for 60 seconds at 50% power. Stir and continue to microwave at 15 second intervals, until melted.

Carefully coat each truffle and remove excess chocolate. Place on a lined baking sheet.

Sprinkle with sanding sugar (optional).
