Ingredients

  • 3 in boneless chicken breasts cut half
  • 6 chicken thighs boneless and skinless
  • 1 ounces can [Herdez Ranchera salsa | http://www.herdeztraditions.com/products/traditional-salsa/herdez-salsa-ranchera/] (substitute 7 salsa of choice), 7oz
  • 11/2 tbsp [fajita seasoning | http://dadwhats4dinner.com/homemade-fajita-seasoning/]
  • 1/2 cup chicken broth
  • 1 bag tri-color onion pepper blend frozen vegetables
  • 4 oz [Velvetea 2% low-fat cheese | http://www.kraftrecipes.com/velveeta/products/loaf.aspx] cubed

Optional Condiments

  • Tortilla Chips
  • Avocado
  • Cojita cheese
  • Olives

Instructions

  1. Place semi frozen chicken into slow cooker.
  2. Season with fajita seasoning. (See [Homemade Fajita Seasoning Mix | http://dadwhats4dinner.com/homemade-fajita-seasoning/]for recipe).
  3. Add onions and peppers.
  4. Pour in ranchera salsa and chicken broth.
  5. Stir to combine all ingredients.
  6. Cook on low for 5-6 hours.
  7. Remove chicken and shred with 2 forks.
  8. Return chicken and [Velveeta 2% low-fat cheese | http://www.kraftrecipes.com/velveeta/products/loaf.aspx] to slow cooker.
  9. Mix together and allow to cook for another 30 minutes, until cheese is melted.
