Place semi frozen chicken into slow cooker.

Add onions and peppers.

Pour in ranchera salsa and chicken broth.

Stir to combine all ingredients.

Cook on low for 5-6 hours.

Remove chicken and shred with 2 forks.

Return chicken and [Velveeta 2% low-fat cheese | http://www.kraftrecipes.com/velveeta/products/loaf.aspx] to slow cooker.

Mix together and allow to cook for another 30 minutes, until cheese is melted.
