Apple Harvest Bread

Must make Apple Harvest Bread with Cider Glaze is perfect for fall. Great for breakfast or as a snack.

Ingredients

APPLE BREAD:

  • 3 cups King Arthur Unbleached All-Purpose Flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp pumpkin pie spice
  • 2 tsp ground cinnamon
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 3 eggs
  • 1 1/3 cups brown sugar
  • 1/2 cup cooked mashed apple or natural applesauce
  • 1 1/2 cups or more chopped apple
  • 1/2 cup chopped dates optional

STREUSEL TOPPING (optional)

  • 1/8 cup butter
  • 1/4 cup flour
  • 2 tbsp brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup quick cooking oats

APPLE CIDER GLAZE:

  • 1 cup vanilla frosting
  • 2 tbsp apple cider or apple juice

Instructions

  1. Preheat oven to 350°F
  2. Mix together flour, baking powder, soda, salt and spices.
  3. In another bowl, beat together the buttermilk, vanilla, eggs, sugar, mashed apple, chopped apple and chopped dates.
  4. Blend this mixture into the dry ingredients.
  5. Pour into lightly greased mini loaf pan.
  6. Top with streusel.(optional)
  7. Bake for 20-25 minutes until a toothpick inserted comes out clean.
  8. Remove from oven and allow to cool before topping with Apple Cider Glaze

STREUSEL TOPPING

  1. Mix butter, flour, brown sugar, cinnamon, and oats in a bowl until crumbly. Set aside.

APPLE CIDER GLAZE

  1. Melt frosting in the microwave for 30 seconds,
  2. Whisk in apple cider and allow to cool.
  3. Pour over loaves.
