So how do you take two of the best appetizers, jalapeño poppers and nachos, and make them even better? It’s easy, when you make my Chicken Jalapeño Popper Baked Nachos.
I can’t believe Memorial Day is right around the corner. I was looking for a new appetizer to make and came up with these Chicken Jalapeño Popper Baked Nachos. Perfect to feed a crowd at your next cookout. The nachos can be made in batches. Have some ready when your guest arrive and then make another batch when people get hungry again in the late afternoon.
I have been making jalapeño popper dip for a long time and a few years back I decided to make it more substantial by adding cooked chicken. I also love to serve nachos at parties, but a big pile is hard to share and the chips always get soggy. You can alleviate this problem by baking your nachos. I have been looking for a better tortilla chip to use for nachos and dips. I finally found it in the organic food section of my local grocery.
Food Should Taste Good Tortilla Chips come in 15 great flavors including the Jalapeno with Cheddar Tortilla Chips, which I used to make my Chicken Jalapeño Popper Baked Nachos. I not only love good appetizers, but also a great beer paired with them. The spiciness of my baked nachos pair perfectly with IPA. I served mine with a New Belgium Ranger. IPA’s pair great with spicy dishes. The complexity of the beer will fan the flames at first, but douse them in the end. The heat and the flavors go so well together.
Method: To make the chicken jalapeño popper dip, mix all ingredients in a large bowl. Refrigerate the dip until you are ready to assemble the baked nachos. Layer Jalapeño with Cheddar Tortilla Chips on a cast iron griddle or half sheet pan. Place chicken jalapeño popper dip, in spoonfuls, on top of chips. Top with sliced jalapeños and cheese. In a pre-heated oven, bake for 10-15 minutes until browned and cheese is bubbly. Enjoy!

- 2 oz packages low-fat cream cheese softened, 8
- 1 cup low-fat mayonnaise
- 4 oz can chopped green chilies drained
- 1 fresh jalapeño seeded and chopped
- 1 cup Mexican cheese blend shredded, divided
- 1 cup pepper jack cheese shredded
- 1/4 cup Parmesan cheese grated
- 3 cups cooked chicken breasts chopped
- 1 oz bag Food Should Taste Good Jalapeño with Cheddar Tortilla Chips 5.5
- 2 green onions sliced thin
- 1 fresh jalapeño seeded and sliced
- Pre-heat oven to 425°F
- In a large bowl using a hand mixer, blend together creme cheese, mayo, green chilies, jalapeño, 1/2 cup Mexican cheese, 1/2 cup pepper jack cheese and parmesan, until smooth and combined.
- Fold in chicken and mix well on low.
- Spread Jalapeño with Cheddar Tortilla Chips evenly on two baking dish or oven proof serving platters.
- Carefully pace spoonfuls of Chicken Jalapeño Popper Dip on top of chips.
- Spread remaining cheese, green onion and sliced jalapeño's on top of chips.
- Bake 10 minutes until cheese is bubbly and chips are crispy.
